Roasted Vegetable Quinoa Salad:

Ingredients:

  • 1 cup quinoa, rinsed and cooked
  • Assorted vegetables (bell peppers, cherry tomatoes, zucchini, etc.)
  • Olive oil
  • Salt and pepper to taste
  • Fresh herbs (parsley, basil) for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C).
